The origin of the Damask rose is still enshrouded in mystery, with speculation that it is from Asia Minor or the Middle East. It takes its name from the city of Damascus, the capital of Syria. Today, three countries are best known for cultivating this rose and producing its essential oil or absolute: Turkey, Bulgaria, and Morocco. In Morocco, the world’s thirdlargest rose producer, is a place known as Dadès Valley, also known as the Valley of the Roses, that is covered with flourishing rose fields. This valley stretches southeast of Morocco, in the foothills of the High Atlas.
The Damask rose, introduced over 1,000 years ago in Morocco, is one of the country’s cultural treasures. In the Dadès Valley, famed for its endless expanses of roses come springtime, rosebushes were originally used as hedges to protect the fields from goats.

Like many flowers, roses are fragile and are harvested at dawn. The early hours of the morning provide much-needed humidity for picking the justopening roses. The harvest season lasts for 30 to 35 days.
